These potato and zucchini empanadas are so delicious that no one will be able to resist!

Ingredients:
2 zucchini
Salt
2 potatoes
1 onion
1 carrot
A sprig of parsley
2 eggs
Black pepper
3 tablespoons breadcrumbs
Mozzarella cheese
Olive oil
Instructions:
Grate the zucchini and sprinkle with salt. Let it sit for about 10 minutes to release excess moisture. Then, squeeze the excess water from the grated zucchini with your hands or a clean kitchen towel.
