Prepare the Ingredients:
Finely slice the onions. Cut the peppers into strips. Peel and cut the potatoes into slices.
Coat the Cod:
Pat dry the pieces of desalinated cod with absorbent paper. Lightly coat each piece with wheat flour, tapping off excess.
Cook the Vegetables:
In a large skillet, heat a little olive oil over medium heat. Add the sliced onions and fry until translucent. Next, add the peppers and continue to cook until tender.
Cook the Potatoes:
In the same pan, push the onion and pepper mixture to one side. Add more olive oil if necessary, then add the potato slices. Cook them until golden and tender.
Add the Cod:
Push the cooked vegetables to the side of the pan. Add more olive oil if necessary. Carefully place the coated cod pieces in the pan. Cook until the cod is browned on both sides.
Season and deglaze:
Sprinkle the sweet paprika over the cod. Season everything with salt to taste. Pour in the white wine to deglaze the pan, scraping up any browned bits from the bottom.
Leave to simmer :
Reduce the heat and simmer gently for a few minutes, allowing the flavors to blend and the cod to cook completely.
Serve :
Once everything is cooked and tender, garnish with chopped parsley if desired. Serve the Portuguese-style cod hot, with the vegetables and cooking juices on a spoon.
