In a bowl, mix the flour, a pinch of salt and the butter with your fingertips until you have a mixture of sandy texture.
Add the egg yolk and continue mixing.
Make a ball with the dough, wrap in cling film and place in the fridge for 1 hour.
Then, roll out the dough using a rolling pin and lay it on a pie pan.
Pierce the bottom with a fork, refrigerate for 15 minutes, then bake in a preheated oven at 180°C for 10 minutes.
In a hot frying pan, add a drizzle of olive oil and sauté the onion and garlic.
Add the shrimp and sauté quickly. Season with salt and lemon juice and set aside.
In a bowl, beat the eggs with the cream.
Add the grated cheese, salt, nutmeg and chopped parsley.
Stir in the sautéed shrimp and place the mixture on top of the pie shell, already cooked.
Return a preheated oven to 200°C for 30 minutes
