This version is warm, tangy, and can be a refreshing change of pace. What's lovely about this dish is its heartiness, which comes from the potatoes, balanced by a zesty vinegar dressing and a good punch of flavor from bacon and onions. - 3 pounds of red potatoes, scrubbed and cut into bite-sized pieces
- 8 slices of thick-cut bacon, chopped
- 1 medium onion, finely chopped
- 1/3 cup apple cider vinegar
- 3 tablespoons water
- 2 tablespoons granulated sugar
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 2 tablespoons fresh parsley, chopped
- 2 tablespoons green onions, sliced
- 1 teaspoon Dijon mustard (optional for a little extra zip)
