What happens if you don’t soak them in cold water?
If you don’t soak the potatoes, the vegetable’s starch will mix with the water, creating a thick, mealy substance. Here is a recipe you can make with delicious new potatoes.
A recipe for baked new potatoes with rosemary and garlic
To prepare this recipe you will need:
- 1 kg new potatoes
- 2 or 3 sprigs of rosemary
- salt and pepper
- 2-3 cloves of garlic
- 2 tablespoons oil
Preparation method
The potatoes must first be soaked in cold water to make it easier to remove the peel. The skin can be peeled using a vegetable peeler.
They should then be cut into cubes, leaving the smaller pieces whole. Wash and then dry with paper towels to remove excess water. Then peel the garlic and chop finely. Mix the potatoes with salt, add garlic, oil and chopped rosemary. Preheat the oven to 220 degrees, place the baking paper in the mold and put the potatoes in it.
Do not add water to the pan or cover the pan with aluminum foil, otherwise steam will form. Reduce the oven temperature to 200 degrees Celsius and bake the potatoes for half an hour until golden brown.
