Strawberry Cheesecake

Spread this mixture on the bottom of cookies, cover and refrigerate overnight.

When ready to serve, remove the cheesecake from the pan, then top with strawberry wedges.

Warm the jam and lemon juice over low heat, then drizzle over the cake.

Serve immediately
