Lemon madeleines

Beat the eggs and sugar until the mixture turns white.

Add the grated zest, lemon juice and milk. Finally, add the melted butter.

Preheat your oven to 250°C and let this dough rest for 20 minutes in the refrigerator.

If you’re using sheet pans, remember to butter the dimples.

If you have silicone molds, then there’s no need to butter them.
