Lemon madeleines

Immediately lower the oven temperature to 200°C. Pour the batter three-quarters into the pockets of the moulds and bake.

Bake for about 10 minutes. When the madeleines are well puffed and lightly browned, remove the baking sheets from the oven
, unmold the madeleines, and let them cool.
