Instructions:

  1. In a mixing bowl, whisk together the yeast, honey (if using), and warm water. Ensure everything is well combined. Cover the bowl with a moist towel or cloth and let it sit for 5 minutes.
  2. Add the flour and salt to the yeast mixture. Stir until a dough forms.
  3. Knead the dough for two to three minutes using a wooden spoon. If the dough becomes sticky, moisten your hands to prevent sticking.
  4. Allow the dough to rest in a warm spot for two hours, until it doubles in size. You can use a microwave or another warm area for this step.
  5. After two hours, perform a stretch and fold three times, with intervals of 30 minutes between each fold.
  6. Shape the dough into a ball on a lightly floured surface. Place the dough in a bowl or bread basket to rise for an additional hour, while preheating your Dutch oven or oven.
  7. Preheat your oven to 450 degrees Fahrenheit.
  8. Once the oven is ready, heat the Dutch oven for 30 minutes. Five minutes before you’re ready to bake, carefully transfer the dough onto a sheet of parchment paper. Score the dough along the edges.
  9. Place the dough in the preheated Dutch oven. For a crispier crust, add an ice cube to generate steam. Bake with the lid on for 30 minutes, then remove the lid and bake for an additional 15 minutes.
  10. Allow the bread to cool before slicing and enjoying!
