Ingredients
To make this gut-friendly fennel soup, you’ll need:
2 large fennel bulbs, chopped
1 onion, chopped
2 cloves of garlic, minced
3 cups of vegetable broth
1 cup of water
2 tablespoons of olive oil
1 potato, peeled and diced
Salt and pepper to taste
Fresh parsley for garnish (optional)
Preparation
1. Prepare the Vegetables:
Start by chopping the fennel bulbs, onion, and potato. Mince the garlic cloves.
2. Sauté the Aromatics:
In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until they become soft and fragrant, about 5 minutes.
3. Add the Fennel and Potato:
Add the chopped fennel and diced potato to the pot. Stir well to combine with the onion and garlic.
4. Pour in the Broth:
Add the vegetable broth and water to the pot. Bring the mixture to a boil, then reduce the heat and let it simmer for about 20-25 minutes, or until the fennel and potato are tender.
5. Blend the Soup:
Using an immersion blender, blend the soup until it reaches a smooth, creamy consistency. If you don’t have an immersion blender, you can carefully transfer the soup to a regular blender in batches.
6. Season and Serve:
Season the soup with salt and pepper to taste. Ladle it into bowls and garnish with fresh parsley if desired.
