Bring a large saucepan or Dutch oven filled with sliced bananas, pineapple (and its juices), sugar, coconut, and lemon juice to a boil over medium-high heat.
Turn the heat down to medium-low and simmer, stirring often, until the mixture thickens and shrinks. Sliced bananas will crumble into little bits.
Take the mixture off the heat and pour it into glass jars when it forms a coating on the back of a spoon. Once cooled, transfer to the fridge and keep until needed.
