Using Ice Cubes to Improve the Texture of Ground Meat

When mixing ground meat for burgers or meatballs, add one or two ice cubes to the mixture and gently mix. Alternatively, you can place a small ice cube in the center of each burger patty before grilling.
For sausages, mix the ice cubes directly into the meat mixture before stuffing.
