Low Carb Broccoli Egg Bites Recipe

1. Preheat Your Oven: Set your oven to 350°F (175°C). Prepare a 12-cup muffin tin by lightly spraying it with non-stick cooking spray or lining it with muffin liners for easy cleanup.
2. Steam Broccoli: Steam the chopped broccoli until tender yet slightly firm, about 3 to 4 minutes. Allow to cool slightly.
3. Whisk Eggs and Cream: In a mixing bowl, whisk together the eggs, heavy cream, salt, and pepper until well combined.
4. Combine Ingredients: Stir in the shredded cheddar cheese and, if desired, the diced red bell pepper. Mix in the steamed broccoli.
5. Fill Muffin Tin: Scoop the egg mixture evenly into the prepared muffin tin, filling each cup about 2/3 full.
6. Bake: Place in the preheated oven and bake for 15 to 20 minutes, or until the egg bites are set and lightly golden on top.
7. Cool and Serve: Let the egg bites cool for a couple of minutes before removing them from the muffin tin. Serve warm.
