Instructions:
Pre-heat the oven : Preheat the oven to 200oC and line a baking sheet with baking paper.
Prepare potatoes and zucchini: Peel the potatoes and cut into cubes. Wash the zucchini, remove the ends and grate them. Put the grated potatoes and zucchini in a large bowl.
Sauté the onion and garlic: In a non-stick pan, heat some olive oil over medium heat. Add the chopped onion and garlic and sauté them until they become translucent and slightly golden. Remove from heat and let cool slightly.
Prepare the meatball mixture: Add the onion and garlic sautéed to the bowl with the potatoes and grated zucchini. Also add the egg, breadcrumbs, grated cheese, salt and pepper. Stir well until a homogeneous mixture is obtained.
Form the meatballs: With your hands slightly damp to prevent the mixture from sticking, form even-sized meatballs and place them on the prepared baking pan.
Bake: Put the pan in the preheated oven and bake the meatballs for about 25-30 minutes, or until they become golden and crispy.
Serve: Once ready, bake the potato and zucchini meatballs and hot servile. You can garnish them with a little fresh chopped parsley for a touch of freshness.
