Marinate the Chicken: In a bowl, mix olive oil, lemon juice, minced garlic, oregano, thyme, salt, and pepper. Add chicken and coat well. Cover and marinate in the fridge for at least 30 minutes or up to 4 hours.
Prepare the Tzatziki: In a small bowl, combine Greek yogurt, grated cucumber, lemon juice, garlic, dill (or parsley), salt, and pepper. Stir well and refrigerate until ready to serve.
Grill the Chicken: Preheat grill or grill pan to medium-high heat. Grill marinated chicken for 5-7 minutes per side, or until fully cooked and charred. Remove from heat, let rest for a few minutes, then slice.
Assemble the Gyros: Warm pita bread on the grill or in a skillet. Add lettuce, tomato slices, cucumber, and red onion on each pita. Place sliced chicken on top and add a generous dollop of tzatziki sauce.
Serve and Enjoy: Serve immediately with extra tzatziki on the side if desired.
