1.Prepare the Cabbage Leaves:

Begin by carefully separating the leaves from your half head of cabbage. Try to keep the leaves intact as much as possible.
Blanch the leaves in a pot of boiling water for 2-3 minutes. This softens them enough to roll without breaking. Drain and set aside to cool.
2.Cook the Filling:

Heat a small amount of olive oil in a skillet over medium heat.
Sauté the chopped onions, green onions, and optional red pepper until they are soft and translucent.
Add the minced chicken breast and minced garlic to the skillet. Cook until the chicken is thoroughly cooked and no longer pink.
