Sear the Beef: Heat the sesame oil in a large skillet over medium-high heat. Add the stew beef and brown all sides (just sear, not cook through).
Mix the Sauce: In a medium bowl, whisk together the minced garlic, honey, ketchup, soy sauce, and oregano.
Slow Cook: Place the browned beef in the slow cooker, pour the sauce over, and stir to combine. Cook on LOW for 4 hours or until the beef is tender.
Thicken the Sauce (optional): If the sauce is too thin, mix 1 tablespoon of cornstarch with ¼ cup of water and stir into the sauce.
Serve: Garnish with sesame seeds and parsley/scallions. Serve over rice, noodles, or as an appetizer.
