1. Prepare the Vegetables
Start by cutting the broccoli and cauliflower into florets. Rinse them under cold water and let them drain.
2. Sauté the Aromatics
In a large skillet, heat the olive oil over medium heat. Add the finely chopped onion and sauté until it becomes translucent, about 3-4 minutes.
Add the minced garlic and continue to sauté for another minute until fragrant.
3. Add the Vegetables
Add the broccoli and cauliflower florets to the skillet, stirring to combine with the onions and garlic. Cook for about 5 minutes, allowing the vegetables to begin to soften.
4. Spice it Up
Sprinkle the smoked paprika and ground cumin over the vegetables. Stir well to ensure the spices coat the broccoli and cauliflower evenly. Season with salt and pepper to taste.
5. Add Broth and Simmer
Pour in the vegetable or chicken broth. Cover the skillet and let the vegetables simmer for about 10 minutes, or until they are tender but still slightly crisp.
