Prepare the Zucchini: Start by washing the zucchinis thoroughly. Grate them using a coarse grater and place the grated zucchini in a colander. Sprinkle with salt and let sit for 10 minutes to draw out moisture. After 10 minutes, squeeze out as much water as possible from the zucchini to ensure your fritters are not soggy.
Mix the Ingredients: In a large bowl, beat the eggs. Add the drained zucchini, flour, salt, and pepper. If using, chop the herbs finely and incorporate them into the mixture. Stir everything together until well combined.
