1. **Preheat & Sear the Roast:**
- Preheat your oven to 300°F (150°C).
- Season the chuck roast generously with salt and pepper. In a large Dutch oven, heat olive oil over medium-high heat. Sear the roast on all sides until browned, about 3-4 minutes per side. Remove the roast and set aside.
2. **Sauté the Vegetables:**
- In the same Dutch oven, add the chopped onion and cook until softened, about 5 minutes. Add the garlic and cook for another minute until fragrant.
- Stir in the tomato paste and cook for 1 minute to deepen the flavor.
3. **Build the Braising Liquid:**
- Pour in the beef broth, red wine (if using), and Worcestershire sauce, scraping up any browned bits on the bottom of the pot. Add thyme, rosemary, and bay leaves.
