Prepare the Broccoli:
If using fresh broccoli, steam or boil it for about 5 minutes until it’s tender but still bright green. If using frozen broccoli, make sure it’s fully thawed and well-drained. Once cooked, chop the broccoli into small pieces and let it cool slightly.
Mix the Ingredients:
In a large bowl, combine the chopped broccoli, shredded cheddar cheese, breadcrumbs, Parmesan cheese, eggs, chopped green onions, garlic powder, salt, and pepper. Mix well until everything is evenly combined. The mixture should hold together when pressed; if it’s too wet, add a bit more breadcrumbs, and if it’s too dry, add a small amount of beaten egg.
Form the Patties:
Use your hands to form small, round patties (about 2-3 inches in diameter and 1/2 inch thick). Press each patty gently to make sure it holds its shape.
Cook the Patties:
Heat the olive oil in a large skillet over medium heat. Once the oil is hot, add the patties to the skillet (work in batches if needed to avoid overcrowding).
Cook the patties for about 3-4 minutes on each side, or until golden brown and crispy. Adjust the heat as needed to avoid burning.
Serve:
Transfer the cooked patties to a plate lined with paper towels to drain any excess oil. Serve warm, optionally with a side of sour cream, Greek yogurt, or your favorite dipping sauce.
