Chicken , Zucchini, and Fresh Corn Burgers

  • 1 lb. lean ground chicken
  • 1 medium zucchini, coarsely chopped
  • Kernels from 1 ear of fresh corn, husks and silk removed
  • 1/2 medium red bell pepper, finely diced
  • 1/4 cup finely chopped fresh parsley
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • Optional: whole grain burger buns, lettuce leaves, tomato slices, avocado slices for serving
