Preheat the Oven: Preheat your oven to 425°F (220°C).
Prepare the Potatoes: Scrub the potatoes under running water to remove any dirt. Pat them dry with a towel. Prick each potato a few times with a fork to allow steam to escape during baking.
Season the Potatoes: In a small bowl, mix together the olive oil, minced garlic, rosemary, thyme, oregano, salt, and pepper. Rub this mixture all over the potatoes, ensuring they are well-coated.
Bake the Potatoes: Place the seasoned potatoes directly on the oven rack or on a baking sheet lined with parchment paper. Bake for about 45-60 minutes, or until the potatoes are tender and the skins are crispy. You can check for doneness by inserting a fork into the potatoes; it should slide in easily.
