Dissolve Gelatin: In a medium bowl, mix the raspberry gelatin with 1 cup of boiling water, stirring until fully dissolved. Then, add 1/2 cup of cold water and mix well.
Step 3: Assemble the Poke Cake
Poke Holes: Once the cake is cooled, use the end of a wooden spoon or a fork to poke holes all over the cake. Ensure the holes are evenly spaced and go all the way through to the bottom of the cake.
Add Gelatin: Carefully pour the raspberry gelatin mixture over the cake, ensuring it seeps into the holes. Use a spoon to gently guide the gelatin if needed.
Step 4: Chill and Set
Refrigerate: Place the cake in the refrigerator to chill for a few hours or until the gelatin is firmly set.
Step 5: Decorate the Cake
Whipped Topping: Spread a layer of whipped cream or whipped topping evenly over the top of the cake.
Add Coconut and Raspberries: Sprinkle the toasted coconut over the whipped cream and then scatter fresh raspberries on top.
