Step 1: Cook the Sausages and Bacon
Preheat a skillet over medium heat. Place the sausage links in the pan and cook, turning occasionally, until they’re browned and cooked through (about 8-10 minutes).
Add the bacon to the skillet. Cook until crispy, flipping as needed. Drain both on a paper towel-lined plate to remove excess grease.
Step 2: Make the Pancake Batter
In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
In a separate bowl, whisk the egg, buttermilk, and melted butter until smooth.
Combine the wet ingredients with the dry ingredients, stirring gently until just combined. A few lumps are okay—avoid overmixing for fluffier pancakes.
Step 3: Cook the Pancakes
Heat a non-stick skillet or griddle over medium heat and grease it lightly with butter.
Pour about ¼ cup of batter onto the skillet for each pancake. Cook for about 2-3 minutes, until bubbles form on the surface and the edges look set.
Flip and cook for another 1-2 minutes, until golden brown. Transfer to a plate and keep warm.
