Directions:
Preheat the oven to 350°F (175°C).
Prepare the beef mixture: In a large skillet over medium-high heat, cook the ground beef until it starts to brown, breaking it into small pieces as it cooks.
Add the chopped onion, red pepper, and garlic to the pan. Cook until the vegetables are soft and the beef is browned.
Add the salt, black pepper, paprika, and dried oregano to the mixture. Stir well to combine.
Add the diced tomatoes (drained), tomato soup, tomato sauce, and yellow mustard to the pan. Mix until everything is evenly combined.
Let the mixture simmer for about 5 minutes to allow the flavors to meld.
Combine with pasta and cheese: In a large bowl, mix the cooked pasta with the beef mixture. Add 1 cup of grated cheddar cheese and 1 cup of grated mozzarella cheese, stirring until combined.
Assemble the casserole: Pour the pasta and beef mixture into a greased 9×13-inch baking dish. Sprinkle the remaining 1 cup of cheddar cheese and 1 cup of mozzarella cheese evenly on top.
Bake: Place the casserole in the preheated oven and bake for 20 to 25 minutes, or until the cheese is melted and bubbly. For a crispy, golden top, place the casserole under the broiler for an additional 2-3 minutes, but keep an eye on it to avoid burning.
Garnish and serve: Remove the casserole from the oven and let it cool slightly before serving. Garnish with fresh parsley and pickle slices, if desired.
