Prep the Chicken: Make a pocket in each chicken breast by slicing along the side. Season the inside and outside with salt and pepper.
Make the Filling: In a bowl, mix together spinach, ricotta, parmesan, and minced garlic. Stuff this mixture into the pockets of the chicken breasts.
Cook the Chicken: Heat olive oil in a large skillet over medium-high heat. Sear the chicken on both sides until golden brown, about 6-7 minutes per side.
Bake: Transfer the skillet to a preheated oven at 375°F (190°C) and bake for 15-20 minutes, or until chicken is cooked through.
Serve: Garnish with fresh thyme and serve hot.
