24 Medjool dates
1/2 cup feta cheese, crumbled
1/4 cup Parmesan cheese, finely grated
2 tablespoons olive oil
1 teaspoon fresh thyme, finely chopped
Pinch of black pepper
Directions

1. Preheat your oven to 375 degrees Fahrenheit.
2. Carefully pit the dates by making a small slit on one side and removing the stone, ensuring the dates remain intact.
3. In a small bowl, mix together crumbled feta, grated Parmesan, chopped thyme, and black pepper.
4. Stuff each date with the cheese mixture, pressing the sides together gently to enclose the filling.
5. Arrange the stuffed dates on a baking sheet lined with parchment paper.
6. Drizzle the olive oil over the stuffed dates.
