In a medium bowl, combine the crushed chocolate sandwich cookies and melted butter until well mixed.
Press the mixture evenly into the bottom and up the sides of a 9-inch pie dish.
Place the crust in the refrigerator to set while you prepare the filling.
Prepare the Filling:
In a large mixing bowl, beat the heavy cream and granulated sugar until stiff peaks form. Set aside.
In another bowl, beat the cream cheese, powdered sugar, Irish cream liqueur, coffee, and vanilla extract until smooth and creamy.
Gently fold the whipped cream into the cream cheese mixture until well combined.
Pour the filling into the prepared crust and spread evenly.
Refrigerate the pie for at least 4 hours, or until set.
