Make the noodles.
Once the soup is gently boiling, put in the broken lasagna noodles (or the pasta you like). Mix well and cook for 10-12 minutes, or until the noodles are soft, stirring from time to time.
Make the cheese mix.
While the soup is cooking, combine ricotta cheese, 1 cup of mozzarella, and grated Parmesan cheese in a small bowl. This will be added to the soup to make it rich like lasagna.
Put the cheese on top.
After the noodles are done, add spoonfuls of the cheese mixture to the soup. Gently mix to blend well, allowing the cheese to melt and make the soup creamy.
Wait on tables.
Put the soup in bowls and sprinkle the rest of the shredded mozzarella cheese on top. Add some fresh basil or parsley on top for a pop of color and taste.
