Step 1: Preheat the Oven and Prepare Vegetables
Preheat the oven to 425°F (220°C).
In a mixing bowl, toss the carrots, zucchini, bell peppers, and red onion with olive oil, salt, pepper, and Italian seasoning.
Spread the vegetables evenly on a baking sheet in a single layer.
Roast in the preheated oven for 20-25 minutes, or until the vegetables are tender and slightly caramelized around the edges.
Step 2: Prepare the Steak Bites
While the vegetables are roasting, pat the steak cubes dry with a paper towel to remove excess moisture (this helps them sear well).
Season the steak pieces with salt and pepper.
Heat olive oil in a cast iron skillet over medium-high heat until hot.
Add the steak bites to the skillet in a single layer, and cook for about 2-3 minutes on each side, or until browned. Avoid overcrowding the pan, and cook in batches if necessary.
