Step 4: Combine the Dry Ingredients
In another bowl, combine the flour, sugar, baking powder, salt, and cinnamon (if using). Mix well to ensure the dry ingredients are evenly distributed.
Step 5: Create the Pie Batter
Pour the wet ingredients into the dry ingredients, whisking until the batter is smooth and free of lumps. The batter will be quite thin, but that’s exactly what you want—it will form a custard layer as it bakes.
Step 6: Assemble the Pie
Layer the sliced peaches and blueberries in the prepared pie dish. Pour the batter over the fruit, ensuring it evenly covers the fruit and fills in the gaps. The batter will set around the fruit as it bakes.
Step 7: Bake the Pie
Place the pie dish in the preheated oven and bake for 45-50 minutes, or until the pie is golden brown on top and a toothpick inserted into the center comes out clean. The pie may puff up slightly while baking but will settle as it cools.
Step 8: Cool and Serve
Let the pie cool for at least 15 minutes before slicing. If you want to make it even more indulgent, serve it with a dusting of powdered sugar or a dollop of whipped cream or vanilla ice cream on top.
