1. Preheat Oven & Prepare:
• Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
2. Combine Dry Ingredients:
• In a medium bowl, whisk together the flour, baking soda, baking powder, and salt. Set aside.
3. Cream Butter & Sugars:
• In a large bowl, using an electric mixer, cream together the softened butter, granulated sugar, and brown sugar until smooth and creamy.
4. Add Egg & Vanilla:
• Beat in the egg, followed by the vanilla extract, ensuring they’re well incorporated.
5. Mix in Dry Ingredients:
• Gradually add the dry ingredients to the butter mixture, mixing just until combined.
6. Stir in Goodies:
• Fold in the oats, chocolate chips, shredded coconut, and chopped pecans, mixing until evenly distributed.
7. Drop & Bake:
• Using a cookie scoop or two spoons, drop rounded tablespoons of cookie dough onto the prepared baking sheets, spacing them about 2 inches apart.
• Flatten each slightly with the back of a spoon, then bake in the preheated oven for 10-12 minutes or until the edges are golden brown.
8. Cool & Enjoy:
• Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
