Preparing the onions.
Begin by removing the outer layer of the onions and cutting them into thin slices. You should have about 10 cups of sliced onions in the end.
How to Caramelize Onions
In a large pot, heat 3 tablespoons of olive oil over medium heat. Put your sliced onions in and mix them well to make sure they are covered with oil. Cook the onions in a pan for 15-20 minutes, stirring often until they become soft.
Achieving a Tan
Turn up the heat to medium-high and add the rest of the olive oil and the butter. Keep stirring while the onions start to turn brown. This can take between 20 and 40 minutes, depending on the pots you have and the kind of onions you are using.
Finishing the Caramelization Process and Including Garlic
To speed up the caramelization, put a little bit of sugar and salt on the onions. Continue cooking for another 10-15 minutes until the onions turn a dark brown color. Lastly, put in the chopped garlic and cook for one more minute.
