Classic Meatloaf

Prepare the Oven and Pan: Preheat your oven to 350°F (175°C). Spray a loaf pan with cooking spray to prevent sticking. Alternatively, use a baking sheet lined with parchment paper or foil for a different shape.
Cook the Vegetables: Heat canola oil in a large nonstick skillet over medium heat. Add mushrooms, onion, carrot, and celery. Cook, stirring frequently, for about 5 minutes until the onion is translucent and vegetables are softened.
Combine Ingredients: Transfer cooked vegetables to a large mixing bowl. Add ground beef, oats, egg whites (or whole egg), ketchup, Worcestershire sauce, dried thyme, salt, pepper, and garlic powder (or minced garlic). Mix thoroughly using your hands until well combined, being careful not to overmix.
