Step 2: Make the Cheesecake Filling
In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Using a hand mixer or whisk, beat the mixture until smooth and creamy. Gradually add the heavy cream and continue to mix until the filling is light and fluffy, resembling a cheesecake texture.
If you want a thicker filling, you can add a little more powdered sugar to your liking, but the mixture should be smooth enough to pipe into the strawberries easily.
Step 3: Stuff the Strawberries
Spoon the cheesecake filling into a piping bag or a plastic sandwich bag with the corner snipped off. This will make it easier to pipe the filling neatly into each hollowed-out strawberry. Gently squeeze the bag and fill each strawberry with the cheesecake mixture until they are heaping with filling, but be careful not to overfill.
Step 4: Garnish and Serve
Once your strawberries are filled with cheesecake goodness, sprinkle a pinch of graham cracker crumbs over the top of each strawberry to mimic the crust of a traditional cheesecake. For added decoration, you can add a few mini chocolate chips, a sprig of fresh mint, or even more fresh fruit for a burst of color.
Arrange the stuffed strawberries on a serving platter and refrigerate them for at least 30 minutes before serving. This helps the cheesecake filling set and ensures the strawberries stay firm and fresh.
