Add the Wet Ingredients:
In a separate bowl, beat the eggs and vanilla extract (if using) until well combined. Add the egg mixture to the flour and butter mixture, stirring until a dough forms. The dough should be slightly sticky but manageable.
Shaping and Baking the Biscuits
Preheat the Oven:
Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
Shape the Biscuits:
Turn the dough out onto a lightly floured surface. Roll it out to about 1/4-inch thickness. Use a biscuit cutter or a round cookie cutter to cut out biscuits. Re-roll the scraps as needed until all the dough is used.
Apply the Egg Wash:
Place the biscuits on the prepared baking sheet. Brush the tops of the biscuits with the beaten egg to give them a shiny, golden finish.
Bake:
Bake the biscuits in the preheated oven for 12-15 minutes or until they are golden brown and crispy around the edges.
Cool:
Transfer the biscuits to a wire rack to cool completely before serving.
