Prepare the filling:
In a large bowl, combine 500g cottage cheese, 3 eggs and 2 tablespoons fresh cream.
Add salt to taste and mix until well combined.
Prepare the filo tart:
Preheat the oven to 180°C (350°F).
Lay out filo tart sheets and brush each one with melted butter.
Place the buttered filo tart sheets in a tart or pie dish, making sure to cover the bottom and sides of the dish.
Add the filling:
Pour the cottage cheese mixture into the filo lined tart dish.
Spread the mixture evenly.
Brush and bake:
Beat the remaining egg and use it to brush the top of the tart.
Bake in the preheated oven for 40 minutes, or until the top is golden brown and the filling is set.
Serve:
Remove the tart from the oven and allow to cool slightly before slicing.
Enjoy the pie warm or at room temperature.

Serve with a glass of chilled white wine for an elegant appetizer.
Add a dollop of creme fraiche on top for extra creaminess.
