Prepare the Filling:
In a skillet over medium heat, cook the sausage until browned and cooked through, breaking it into small pieces as it cooks. Drain any excess fat and let it cool slightly.
Prepare the Puff Pastry:
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
On a lightly floured surface, roll out one sheet of puff pastry to smooth the creases. Cut it into squares or rectangles, depending on your preferred snack size.
Repeat with the second sheet of puff pastry.
Assemble the Snacks:
Place a small spoonful of cooked sausage and a sprinkle of shredded cheese in the center of each puff pastry square.
Fold the pastry over the filling to create a triangle or rectangle, pressing the edges together with a fork to seal.
Place the assembled snacks on the prepared baking sheet.
Brush the tops with beaten egg to give them a golden, shiny finish.
Bake:
Bake in the preheated oven for 15-20 minutes, or until the pastry is golden brown and puffed.
Remove from the oven and let cool slightly before serving.
