Healthy Oatmeal and Apple Cake: A Wholesome Treat for Any Occasion

1 1/2 cups rolled oats
1 1/2 cups whole wheat flour
1 cup unsweetened applesauce
3/4 cup maple syrup or honey
2 large eggs
1/2 cup milk (dairy or non-dairy)
1/4 cup coconut oil, melted
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon salt
2 cups diced apples (peeled and cored)
1 teaspoon vanilla extract

Directions
Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan or line it with parchment paper.
In a large bowl, combine the rolled oats, whole wheat flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
In a separate bowl, whisk together the applesauce, maple syrup (or honey), eggs, milk, melted coconut oil, and vanilla extract.
Pour the wet ingredients into the dry ingredients and mix until just combined.
Fold in the diced apples.
Pour the batter into the prepared cake pan and spread it evenly.
Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
