Step 1: Sear the Meat
In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef stew meat and sear until browned on all sides, about 5-7 minutes. Remove the beef and set aside. Repeat with the chicken chunks until browned, then remove and set aside.
Step 2: Sauté the Aromatics
In the same pot, add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for another minute, until fragrant.
