Step 3: Deglaze and Combine
Pour in the beef broth, using a wooden spoon to scrape up any browned bits from the bottom of the pot. Add the diced tomatoes (with their juice), carrots, celery, and potatoes. Return the browned beef and chicken to the pot.
Step 4: Add the Herbs
Stir in the thyme, rosemary, oregano, and bay leaves. Season with salt and pepper to taste. Bring the stew to a boil, then reduce the heat to low and let it simmer, covered, for about 1.5 to 2 hours, or until the meat is tender and the vegetables are cooked through.
Step 5: Final Touches
Once the stew is done, remove the bay leaves and discard. Taste and adjust the seasoning if needed. Garnish with fresh chopped parsley before serving.
