Cheese-Stuffed BBQ Meatloaf: A Delicious Twist on a Classic Comfort Food

1 ½ lbs ground beef
1 cup breadcrumbs
1 cup shredded cheddar cheese
½ cup BBQ sauce (plus extra for glazing)
1 egg
1 small onion, finely chopped
2 cloves garlic, minced
1 tsp salt
½ tsp black pepper
1 tsp Worcestershire sauce
1 tbsp chopped parsley (optional)

Directions
Preheat the oven to 375°F (190°C). Grease a loaf pan or line it with parchment paper for easy removal.
Prepare the meat mixture: In a large mixing bowl, combine ground beef, breadcrumbs, egg, chopped onion, garlic, salt, pepper, Worcestershire sauce, and ½ cup of BBQ sauce. Mix until all ingredients are well incorporated.
Stuff the meatloaf: Press half of the meat mixture into the bottom of the prepared loaf pan. Create a shallow well in the center and fill with shredded cheddar cheese. Top with the remaining meat mixture, pressing to seal the edges and encase the cheese completely.
Bake: Place the meatloaf in the preheated oven and bake for 40 minutes.
Glaze: Remove the meatloaf from the oven and brush the top with additional BBQ sauce. Return to the oven and bake for another 15-20 minutes, or until the meatloaf is cooked through and the glaze is caramelized.
Rest and Serve: Let the meatloaf rest for 10 minutes before slicing to allow the cheese to set. Garnish with chopped parsley if desired. Serve warm.
