Prepare the Meatloaf Mixture:
Preheat the Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
Sauté the Onion and Garlic: In a small skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic and sauté for 3-5 minutes, until softened and fragrant. Let it cool slightly before adding it to the meat mixture.
Mix the Ingredients: In a large bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, egg, sautéed onions and garlic, oregano, basil, salt, pepper, and parsley. Use your hands or a spoon to mix everything until just combined—be careful not to overmix, as this can make the meatloaf tough.
Form the Meatloaf: Transfer the meat mixture onto the prepared baking sheet or into the loaf pan. Shape it into a loaf, ensuring it’s even on all sides.
Make the Glaze:
Combine the Glaze Ingredients: In a small bowl, mix together the ketchup, Dijon mustard, honey, and garlic powder. Stir until smooth.
Top the Meatloaf with Glaze: Brush the glaze generously over the top of the meatloaf, covering the surface evenly.
