For the Fries:
Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
Bake the Fries: Toss the cut fries with olive oil, salt, pepper, and paprika. Spread them in a single layer on the baking sheet and bake for 25-30 minutes, flipping halfway through, until crispy and golden brown.
For the Philly Cheesesteak Grilled Cheese:
Cook the Steak: In a large skillet, heat olive oil over medium-high heat. Add the thinly sliced ribeye steak, season with salt, pepper, garlic powder, and Worcestershire sauce (if using). Cook for 3-4 minutes until browned. Remove from the skillet and set aside.
Sauté the Vegetables: In the same skillet, add more oil if needed. Sauté the onions, bell peppers, and mushrooms for 4-5 minutes until softened and slightly caramelized. Remove from heat.
Assemble the Sandwiches: Butter one side of each slice of bread. Layer one slice of bread (butter side down) with a slice of provolone cheese, cooked steak, sautéed vegetables, and another slice of cheese. Top with the second slice of bread, butter side up.
