Add garlic and spices

Add the minced garlic, ground cinnamon, and nutmeg to the skillet. Stir well to coat the apples and onions with the spices. Let it cook for another 1-2 minutes until fragrant.
Deglaze the pan

Pour in the vegetable or chicken broth, maple syrup (or honey), and balsamic vinegar. Stir to combine and bring to a simmer. Let it cook for another 5-7 minutes, or until the sauce has thickened slightly and the apples are tender.
Add greens (optional)

Stir in the spinach or arugula, if using, and let it wilt in the sauce for about 2-3 minutes. This adds a fresh, peppery flavor to balance the sweetness of the apples.
