Deliciously Cheesy Ranch Oven Roasted Potatoes

– 4 large russet potatoes, scrubbed and diced
– 1/4 cup olive oil
– 1 packet ranch seasoning mix
– 1 cup shredded cheddar cheese
– 1/4 cup grated Parmesan cheese
– 2 tablespoons chopped fresh parsley (optional)
– Salt and pepper to taste

Instructions:
1. Preheat Oven: Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

2. Prepare Potatoes: In a large bowl, toss diced potatoes with olive oil, ranch seasoning mix, salt, and pepper until evenly coated.

3. Roast Potatoes: Spread potatoes evenly on the prepared baking sheet. Roast for 25-30 minutes, or until golden and crispy, stirring halfway through.

4. Add Cheese: Sprinkle shredded cheddar cheese and grated Parmesan cheese over the potatoes. Return to the oven and bake for an additional 5 minutes, or until cheese is melted and bubbly.
