Preparation: Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan, or line it with parchment paper.

Dry Ingredients: In a medium bowl, whisk together 2 cups of flour, baking powder, baking soda, salt, and 2 teaspoons of cinnamon. Set aside.

Cream Butter and Sugar: In a large bowl, cream the softened butter and granulated sugar until light and fluffy. Incorporate the eggs one at a time, then stir in the vanilla extract.

Combine Dry and Wet Ingredients: Alternately add the dry flour mixture and milk to the wet ingredients, stirring until just combined. Avoid overmixing. Fold in the diced apples.

Make Streusel Topping: Mix brown sugar, 1/4 cup flour, melted butter, and 1 teaspoon cinnamon in a small bowl until crumbly.

Assemble: Pour half of the batter into the prepared loaf pan. Sprinkle half of the streusel topping over it. Repeat with the remaining batter and topping.

Bake: Place in the oven and bake for 50-60 minutes, or until a toothpick comes out clean. Let it cool in the pan for 10-15 minutes before transferring to a wire rack.
