3. Roast the Beef:
Place the roast on a rack in a roasting pan. Roast in the preheated oven for 15 minutes. Reduce the oven temperature to 325°F (165°C) and continue roasting for about 1.5 to 2 hours, or until the internal temperature reaches 135°F (57°C) for medium-rare, 150°F (65°C) for medium, or to your preferred doneness.
4. Rest the Meat:
Remove the roast from the oven and let it rest for 15 minutes before slicing.
Mashed Potatoes
Ingredients:
– 2 pounds (900 g) potatoes (Russet or Yukon Gold)
– 1/2 cup (120 ml) milk (more if needed)
– 1/4 cup (60 g) butter
– Salt and pepper, to taste
Instructions:
1. Cook Potatoes:
Peel and cut the potatoes into chunks. Place them in a pot and cover with cold water. Add a pinch of salt. Bring to a boil and cook for 15-20 minutes, or until tender.
2. Drain and Mash:
Drain the potatoes and return them to the pot. Add butter and mash until smooth. Gradually add milk until desired consistency is reached. Season with salt and pepper.
