Ingredients
4 cod fillets (6 ounces each)
2 tablespoons olive oil
Salt and freshly ground black pepper, to taste
4 ounces unsalted butter
1 clove garlic, minced
Juice of half a lemon
3 tablespoons fresh parsley leaves, finely chopped
2 tablespoons fresh dill weed, chopped
1 tablespoon fresh chives, chopped

Begin by drying off the cod fillets using paper towels. This step is important as it removes excess moisture, which could hinder proper frying. Once dry, season both sides generously with salt and black pepper. Add a bit of oil to each side to enhance browning.
